You want me to cook dinner?!
Well, I actually made dinner tonight. J does about 90% of the cooking (I know, I'm a bad wife), but I found a recipe I had saved for years so I wanted to give it a try. And it was delicious! I'm so proud of myself. However, it was a very simple recipe, so any novice can do it. Trust me. If I can do it, then so can you. I'm taking baby steps! So, go out and buy these ingredients and make a fabulous dinner tonight!
Hunt's Basil Pesto Pomodoro Sauce
Yield: 8 servings (1/2 cup each)
Ingredients
- PAM Olive Oil No-Stick Cooking Spray
- 1 cup chopped white onion (1 cup = 1 large)
- 2 cans (14.5 oz each) Hunt's Diced Tomatoes, undrained
- 1/4 cup prepared basil pesto
- Hot cooked pasta (I used a box of bowtie pasta), chicken or fish optional (I used frozen grilled chicken strips from Costco)
Preparation
Hands On: 15 minutesTotal: 15 minutes
1. Spray large skillet with cooking spray. Heat over medium-high heat. Add onion; cook and stir 5 minutes, or until tender.
2. Add tomatoes and simmer 5 minutes, or until slightly thickened. Stir in pesto just before serving.
3. Serve with 1 pound dry pasta (such as fusilli, spaghetti or penne), cooked according to package directions. May also be served over cooked chicken breasts or fish.
Add some Parmesan cheese and presto! A delicious pasta dish. It is very yummy (even the hubs loved it), and you will have leftovers for a couple of days.
